What is Koshary?

Koshary, Egypt’s beloved street food, originated in the late 19th century as a fusion of numerous cultures, brought by immigrants such as Indians, Italians, and Middle Eastern traders. Over time, Egyptians enhanced it with chickpeas, spiced tomato sauce, and crispy fried onions, creating a bold and flavorful dish. Initially a cheap meal for the poor who couldn’t afford meat, Koshary has evolved into a national staple enjoyed by all, symbolizing Egypt’s rich and diverse culinary heritage.
